Delivery kitchens across the city

San Francisco has several purpose-built delivery kitchen buildings, with private units of different sizes, a driver pickup area and staff who run orders out to couriers, and other buildings are set up as both ghost kitchen and commissary space.

Each of these sites stacks many brands under one roof with shared packing, pickup and storage areas, which makes cleaning a whole-building job. Each brand cares about its own unit, the operator worries about the shared spaces, and a good plan covers both. Restaurants around the city also run delivery-only brands from their own kitchens after the dining room closes.

Between the peaks

Lunch and dinner bring the heaviest order volume, and the windows around them are short. Crews use those windows for quick resets: packing counters cleared, shared sinks cleaned, bins emptied and walkways swept and spot-mopped. Overnight shifts handle degreasing, floor scrubbing, drains and restrooms. When an order surge runs long, the reset moves to the next lull instead of pushing through a busy packing line.

Units that book separately are cleaned on each brand’s chosen schedule, and the shared spaces follow the building’s plan.

Packing counters and courier pickup

Packing counters, label printers, bag stations and container shelving are wiped and cleared of spills and crumbs, and the floor along the packing line is mopped so cardboard bits and film don’t build up.

The pickup area sees couriers all day. Shelves and cubbies, order screens, door glass and handles are cleaned, mats are vacuumed or swapped, and the lobby floor is wet cleaned to keep sidewalk grime out of the building. Shared restrooms for staff and drivers are cleaned and restocked.

Walk-ins, cook lines and drains

Cold rooms and reach-ins are cleaned on a rotation, including floors, shelves, gaskets and handles, with each brand’s product moved and returned at the manager’s direction.

Cook lines and the walls behind them are degreased, and drains are flushed with their grates cleaned to keep the packing area dry and odor-free.

Shared corridors and staff areas

Long corridors connect the units to packing and pickup, and carts roll through them all day. They are swept and mopped on each visit, scuffed walls and door kick plates are wiped, and staff break rooms and lockers are cleaned so the people cooking have a decent place to rest.

Leaving pests nothing to find

Food residue, standing water and overflowing bins are what draw pests, so the overnight routine goes after them: drains flushed, bins washed, crumbs cleared from under shelving and packing tables, and gaps along walls swept out. Keeping those spots clean supports the work of your pest control service.

Trash rooms and loading areas

Delivery packaging fills trash and recycling rooms fast. Bins are emptied, lids and floors washed and overflow cleared, and loading areas and back doors are wiped down. Sidewalks and bin enclosures can be added to pressure washing.

One building, one plan

Where a building combines delivery units with hourly stations, that side’s resets are explained on our shared kitchen cleaning page. A night porter keeps the courier lobby and restrooms in order through the dinner rush; see day and night porter services.

Crews are background-checked, and supervisors report quality inspection findings to your site manager.

What sets the price

Units and brands, shared packing and corridor space, daytime resets, overnight floor and drain work and walk-in size shape the price. We walk the site at a quiet time and send a written quote with every task and frequency. As new brands move in, the plan grows unit by unit. Book a quiet-hour walkthrough to start.

A few useful answers

Common questions.

Can you clean a delivery kitchen that's open late every night?

Yes. Short resets fit between meal peaks, and the heavy work happens after the last orders.

How often is the courier lobby cleaned?

On every visit, including shelves, screens, door glass, mats and the floor.

Can individual brands schedule their own unit cleaning?

Yes. Each brand picks its own window, and the shared areas stay on the building’s plan.

Do you clean the shared corridors between units?

Yes. Corridors are swept and mopped, and walls and kick plates are wiped on every visit.

Do ghost kitchens need different cleaning from shared kitchens?

They do. Ghost kitchens center on private units, packing lines and courier traffic, while shared kitchens center on hourly station resets between tenants. We cover both.
